1. How fruits ripen

To harvest zucchini, courgettes, and pattypan squash correctly, it is important to understand how these crops mature. Unlike tomatoes or watermelons, cucurbit fruits are not picked at full ripeness but much earlier. This is due to two different states of the fruit: technical (harvestable) and biological (physiological) maturity (Nonnecke, 1989; Welbaum, 2015).

What is technical maturity?

Technical maturity is the stage of fruit development when it has reached the size typical for the variety, but the seeds inside have not yet fully formed and remain rudimentary. The skin is thin, easily scratched with a fingernail, and the flesh is tender, juicy, with a mild flavour (Lebedeva, 1987; Kotov & Adritskaya, 2016). It is at this phase that zucchini, courgettes, and pattypan squashes are most valuable in cooking: they can be eaten raw in salads, stewed, fried, baked, or preserved.

What is biological maturity?

Biological maturity occurs later, when the seeds inside the fruit are fully ripe, hard, and have acquired the colour characteristic of the variety. The skin becomes rough and hard (the so‑called “rind”), the flesh loses juiciness and tenderness, becoming fibrous or mealy (Wehner et al., 2020; Welbaum, 2015). Such fruits are no longer suitable for fresh consumption but can be stored for several months.

Why are most fruits picked young?

The main reason is taste and texture. Young fruits at the technical maturity stage contain less coarse fibre, more moisture, have tender flesh and thin skin (Tarakanov & Mukhin, 2003). Over‑grown fruits lose these qualities: the flesh becomes tough, seeds harden, and flavour becomes less pronounced (Nonnecke, 1989; Lebedeva, 1987). That is why most zucchini, courgettes, and pattypan squashes are harvested young – 7–12 days after pollination, when the fruit length reaches 15–25 cm (Kasynkina & Kudin, 2018; Balashev & Zeman, 1981).

How does the structure of flesh and seeds change?

During fruit growth, the following changes occur:

1. Skin. In young fruits, the skin is thin, delicate, easily scratched. As it matures, it becomes rough, hard, covered with a dense cuticle layer, making the fruit resistant to mechanical damage and moisture loss (Wehner et al., 2020; Welbaum, 2015).

2. Flesh. Young fruits consist of large thin‑walled cells rich in water and soluble sugars. With age, cell walls thicken, fibre and starch accumulate, the flesh becomes denser, coarser, and less juicy (Nonnecke, 1989; Tarakanov & Mukhin, 2003).

3. Seeds. In young fruits, seeds are rudimentary – soft, white or very light, underdeveloped. At biological maturity, seeds become hard, darken, are covered with a dense coat, and are fully ready to germinate (Kotov & Adritskaya, 2016; Lebedeva, 1987).

Important to know: if a fruit is left on the plant until full biological maturity, the plant receives a signal that seeds are ripe and stops actively producing new ovaries. This leads to reduced yields (Wehner et al., 2020; Welbaum, 2015). Regular harvesting of young fruits, on the contrary, stimulates the plant to continue flowering and setting new fruits.

Brief summary: to obtain tasty, tender, and juicy produce, zucchini, courgettes, and pattypan squashes are harvested at technical maturity, when seeds are still soft and flesh is juicy. Biological maturity occurs later and is suitable only for long‑term storage of winter varieties, but in that case the fruits lose culinary quality.

2. When to harvest

Harvesting dates for zucchini, courgettes, and pattypan squashes directly depend on the intended use of the fruits. In this section, we will discuss optimal sizes and maturity stages for each type, as well as cases when it makes sense to wait for biological maturity.

General timing guidelines

The first fruits of zucchini and pattypan squashes begin to mature 40–60 days after emergence (Nonnecke, 1989; Balashev & Zeman, 1981). In warm summer conditions, harvesting can begin as early as 7–12 days after flower pollination (Lebedeva, 1987). Fruits grow very quickly – under optimal conditions, their length can increase by 2–5 cm per day (Tarakanov & Mukhin, 2003).

Zucchini and courgettes

Optimal sizes for harvesting:

According to Lebedeva (1987), zucchini at technical maturity have tender skin that is easily pierced with a fingernail. For white‑fruited varieties (‘Gribovskiye 37’, ‘Beloplodnyye’) the optimal fruit length is 15–20 cm, for green‑fruited courgettes (‘Tsukesha’, ‘Aeronaut’, ‘Zebra’) – 12–18 cm (Nonnecke, 1989; Lebedeva, 1987).

Signs of over‑ripeness:

  • The skin becomes hard, difficult to puncture with a nail
  • The surface loses its glossy shine, becomes dull
  • The flesh does not spring back when pressed but remains hard
  • Seeds inside are felt as hard formations

Over‑ripe fruits lose tenderness and juiciness, become fibrous and less tasty (Welbaum, 2015). However, they can be used for making caviar, stews, or animal feed (Kotov & Adritskaya, 2016).

Special features of courgettes. Courgettes differ from ordinary zucchini by a longer period of maintaining technical maturity. Even at a length of 20–25 cm, their flesh remains quite tender and juicy (Nonnecke, 1989). However, for the best flavour, it is recommended to harvest courgettes at 15–18 cm (Lebedeva, 1987).

Pattypan squash

Pattypan squashes are harvested at a younger age than zucchini. They are valued for their dense, crisp flesh and delicate flavour.

Optimal sizes:

  • For preserving and pickling – diameter 5–8 cm, weight 80–150 g (Balashev & Zeman, 1981)
  • For frying and stewing – diameter 8–12 cm, weight 150–300 g (Nonnecke, 1989)
  • Maximum size for maintaining marketable quality – diameter 12–15 cm, weight up to 400 g (Lebedeva, 1987; Tarakanov & Mukhin, 2003)

When over‑grown, the flesh of pattypan squash becomes coarse and the skin tough, so it is not recommended to allow fruits to exceed 15 cm in diameter (Wehner et al., 2020).

When it is justified to harvest mature fruits

In some cases, it makes sense to leave a few fruits until full biological maturity:

1. For seed production. If you want to collect your own seeds, leave 1–2 of the largest and healthiest fruits on the plant until fully ripe. Seeds from such fruits will remain viable for 5–8 years (Welbaum, 2015; Nonnecke, 1989).

2. For long winter storage. Ripe fruits of some zucchini varieties (e.g., ‘Spaghetti’, ‘Kulinarny’) and pumpkins can be stored for several months under proper conditions (Wehner et al., 2020). However, remember that such fruits lose tenderness and are only suitable for boiling, baking, or pureeing.

3. For decorative purposes. Some gardeners leave mature courgettes and pattypan squashes for autumn compositions (Kasynkina & Kudin, 2018).

Important: if you leave a fruit to ripen, the plant will channel all nutrients into its growth and seed formation. New ovaries will then form less well or stop appearing altogether (Welbaum, 2015). Therefore, it is better to leave such fruits only on plants that you do not plan to use actively for harvesting in the current season.

Harvesting periods during the season

  • Early‑ripening varieties (‘Gribovskiye 37’, ‘Beloplodnyye’) – first harvest 40–50 days after emergence (Nonnecke, 1989)
  • Mid‑season varieties (‘Aeronaut’, ‘Tsukesha’) – after 50–60 days (Lebedeva, 1987)
  • Late‑ripening varieties (‘Spaghetti’, ‘Kulinarny’) – after 60–80 days (Wehner et al., 2020)

Fruiting continues until the first autumn frosts. In central Russia, harvesting usually ends in September, in southern regions – in October (Tarakanov & Mukhin, 2003).

Brief summary: zucchini and courgettes are harvested at 12–20 cm length at technical maturity; pattypan squashes – at 5–12 cm diameter. Harvesting mature fruits is justified only for seed production or long‑term storage, but this reduces the formation of new ovaries.

3. Why regular harvesting is important

Many gardeners make the same mistake: seeing beautiful large fruits hanging on the bush, they leave them to “grow more”, hoping for a larger yield. In fact, this leads to the opposite result. Regular harvesting of young fruits is a key condition for obtaining a high yield of zucchini, courgettes, and pattypan squashes throughout the season.

How the plant allocates resources

Zucchini, courgette, and pattypan squash are annual plants with a powerful root system and large leaf apparatus. They are capable of simultaneously forming flowers, ovaries, and filling already set fruits. However, the plant’s resources – water, nutrients, and photosynthetic products – are not infinite (Nonnecke, 1989; Welbaum, 2015).

The plant always strives to reproduce itself, i.e., to leave mature seeds. Therefore, as soon as a fruit appears on the bush and begins to ripen, the plant directs most of its nutrients to its development and the formation of seeds inside it (Wehner et al., 2020; Tarakanov & Mukhin, 2003).

Effect of mature fruits on the formation of new ovaries

If a fruit remains on the plant for a long time and starts to over‑ripen, the following mechanism is triggered:

1. Priority of maturing seeds. A fruit with developing seeds becomes the strongest “consumer” of assimilates. The plant redirects the flow of nutrients from forming new flowers and ovaries to filling the existing fruits (Welbaum, 2015; Nonnecke, 1989).

2. Inhibition of flowering. Ripening fruits release plant hormones that suppress the formation of new female flowers. This is a direct signal to the plant: “seeds are already there, new ovaries are not needed” (Wehner et al., 2020; Kotov & Adritskaya, 2016).

3. Reduction in the number of ovaries. Even if new female flowers appear, they often are not pollinated or do not develop because the plant saves resources for the already “taken” fruits (Lebedeva, 1987; Tarakanov & Mukhin, 2003).

As a result, the yield of a bush on which over‑ripe fruits constantly hang drops sharply: instead of 10–15 marketable fruits per season, you will get 3–5 over‑ripe, coarse, and inedible ones (Kasynkina & Kudin, 2018; Balashev & Zeman, 1981).

How regular harvesting stimulates fruiting

Regular removal of young fruits, on the contrary, keeps the plant in a state of active flowering and setting new fruits. This effect is explained simply:

  • By picking a young fruit, you remove the main “competitor” for nutrients.
  • The plant receives a signal that seeds have not matured and it needs to continue flowering.
  • The freed resources are directed to the formation of new ovaries and leaves that will feed them (Wehner et al., 2020; Welbaum, 2015).

As a result, with regular harvesting, one zucchini plant can yield up to 20–30 fruits per season (Nonnecke, 1989; Lebedeva, 1987). Pattypan squashes, with proper cultivation, can also form up to 10–20 fruits per plant (Tarakanov & Mukhin, 2003).

Optimal harvest frequency

Zucchini and courgettes. At the peak of fruiting, when the weather is warm, fruits grow very quickly – the increase can be 2–4 cm per day (Balashev & Zeman, 1981). Therefore, they must be harvested every 2–3 days, and in hot weather – even every day (Nonnecke, 1989; Lebedeva, 1987).

Pattypan squashes. Their fruiting is extended, and harvesting is also done regularly – every 3–5 days (Kotov & Adritskaya, 2016). Do not wait until the fruit reaches too large a size (diameter over 10 cm), because an over‑grown pattypan quickly becomes coarse (Wehner et al., 2020).

General rule: if you see a fruit on the bush that has reached marketable size (15–20 cm for zucchini, 5–12 cm for pattypan), it must be picked, even if you do not plan to use it immediately. You can store it in the refrigerator or process it, but it should not remain on the plant for more than 1–2 days after reaching the optimal size (Tarakanov & Mukhin, 2003; Welbaum, 2015).

Why remove both over‑ripe and damaged fruits

It is important to remove not only marketable fruits from plants, but also all over‑ripe, misshapen, diseased, or damaged ones. These fruits also consume nutrients and can serve as a source of infection (Nonnecke, 1989; Wehner et al., 2020). Moreover, over‑ripe fruits often begin to rot on the bush, attracting pests and spreading fungal diseases (Lebedeva, 1987; Kotov & Adritskaya, 2016).

Practical advice: each time you walk through the beds, inspect every bush and remove everything that is no longer fit for food. Even if the fruit is not going to be used, it is better to send it to the compost heap than to leave it on the plant.

Signs that you are harvesting too infrequently

  • Large fruits with hard, shiny or dull skin have appeared on the bushes
  • New flowers appear rarely, few ovaries
  • Young ovaries turn yellow and dry up without developing
  • The overall yield has noticeably decreased compared to previous weeks

If you notice at least one of these signs, immediately harvest all fruits that have reached marketable size and remove over‑ripe ones – this will return energy to the plant to continue fruiting (Welbaum, 2015; Nonnecke, 1989).

Brief summary: the more often you harvest young fruits, the more new ovaries will form. The optimal harvesting interval is 2–3 days. Leaving over‑ripe fruits reduces yield many times over and impairs the quality of remaining ovaries. This rule applies to all cucurbits, but for zucchini and pattypan squashes it is critically important because their productive period is short.

4. How to harvest fruits correctly

Proper harvesting technique is as important as timeliness. Careless harvesting can damage the plant, shorten the fruiting period, and reduce the storage life of the fruits themselves. In this chapter, we will cover all details: from tool selection to the best time to go to the garden.

Cutting the peduncle: why you must not tear it off

The most important principle of harvesting zucchini, courgettes, and pattypan squashes is that the fruit is never torn from the plant. It must be carefully cut, leaving part of the peduncle.

Why this is important:

1. Preservation of the growing point. At the base of the fruit, at its attachment to the stem, are conducting bundles through which nutrients flow. A sudden tear can damage not only the peduncle but also the stem itself, opening an “entrance” for pathogens (Nonnecke, 1989; Lebedeva, 1987).

2. Extending storage life. The remaining part of the peduncle (2–3 cm) closes the wound surface, through which pathogens could enter the flesh and wilting processes could begin. A fruit with an intact peduncle stays fresh longer (Wehner et al., 2020; Kotov & Adritskaya, 2016).

3. Prevention of rot. If you tear off the fruit without a peduncle, an open wound remains on its “tail”. Through it, moisture actively evaporates, and the flesh quickly loses firmness, shrivels, and becomes more vulnerable to fungi (Welbaum, 2015; Tarakanov & Mukhin, 2003).

How to cut correctly:

  • Use a sharp knife or pruning shears. A blunt tool crushes tissues, leaves a ragged cut, and injures the plant more severely (Lebedeva, 1987).
  • Hold the fruit with one hand, with the other hand make a clean cut at an angle, at a distance of 2–3 cm from the fruit (leave a “tail”) (Nonnecke, 1989).
  • Do not pull the fruit toward you when cutting – this creates extra tension and can injure the stem (Wehner et al., 2020).

For pattypan squashes their peduncle is shorter and thicker, so it is important to leave at least 1–2 cm of “tail” (Kasynkina & Kudin, 2018).

Time of day and weather conditions

The best time for harvesting is early morning, when fruits and plants are maximally saturated with moisture overnight and are less stressed. At this time:

  • Fruits are more turgid, tissue turgor is maximal – they tolerate transport better (Welbaum, 2015).
  • Plants are not overheated, cut surfaces dry faster during the day, reducing the risk of infection (Nonnecke, 1989).

It is advisable to avoid harvesting during the following periods:

  • In rainy or damp weather. Wet fruits and wet cuts are an ideal environment for fungal and bacterial infections. If rain persists, after harvesting, be sure to let the fruits dry in a ventilated room before storage (Wehner et al., 2020).
  • In the midday heat. In extreme heat, plants are stressed, fruits become less turgid and may lose moisture faster after cutting (Tarakanov & Mukhin, 2003).
  • Immediately after watering. If you plan to harvest, try not to water the beds for 12–24 hours beforehand. Excess moisture in the tissues makes fruits more brittle and promotes rapid spoilage (Lebedeva, 1987).

If you have large volumes, harvesting in the evening, when the daytime heat subsides, is acceptable. In any case, move the fruits to the shade immediately after cutting – do not leave them in the sun, otherwise they quickly lose turgor, the skin shrivels, and storage life decreases (Nonnecke, 1989).

Preventing damage: handling fruits

Young fruits of zucchini, courgettes, and pattypan squashes have thin, delicate skin that is easily scratched, damaged, and begins to rot at the sites of mechanical injury.

Basic handling rules:

  • Do not throw fruits into containers. Place them carefully, without impacts. When dropped on a hard surface, micro‑cracks form in the flesh, invisible from the outside, but quickly become centres of rot (Wehner et al., 2020; Welbaum, 2015).
  • Stack in several layers carefully. Do not pile too many fruits on top of each other – the lower ones may crack under pressure. Use boxes or baskets with padding (straw, soft cloth, paper) (Nonnecke, 1989).
  • Do not touch fruits with wet or dirty hands. Soil particles may remain on the skin, becoming a source of infection. If the fruit is soiled, let it dry and gently remove the dirt with a soft dry cloth (Lebedeva, 1987).

Special care is needed with pattypan squashes – their “ribbed” shape promotes cracking with the slightest pressure (Balashev & Zeman, 1981).

Sorting the harvest on site

Sorting is best done immediately in the garden or in a shady place near the bed. This allows you to discard unsuitable fruits without bringing them into storage, and to separate products by purpose.

What to check:

1. Fruit health. There should be no spots, cracks, insect bites, or rot on the skin. Even a small injury can lead to the loss of the whole fruit (Wehner et al., 2020).

2. Degree of maturity. Fruits at technical maturity for immediate use should be separated from those you plan to store (see Chapter 6). Young, juicy fruits have a shorter shelf life (Nonnecke, 1989).

3. Size. Sort by size: small for preserving, medium for daily consumption, large (but not over‑ripe) for processing or short‑term storage (Kotov & Adritskaya, 2016).

4. Presence of peduncle. Check that the “tail” is not damaged and shows no signs of rot. If it has been accidentally torn off, use that fruit first, as it will store less well (Tarakanov & Mukhin, 2003).

Tip for small farmers: label boxes or baskets by harvest date and fruit size – this will help maintain rotation and reduce storage losses (Welbaum, 2015).

What to do with small ovaries and flowers

During peak fruiting, if you see too many ovaries on the plant (more than 4–5 per bush), some of them can be removed at the small‑ovary stage. This thinning allows the remaining fruits to fill better and be of higher quality (Lebedeva, 1987). However, in amateur gardens this is rarely required – more often the plants shed excess ovaries themselves when resources are insufficient.

Male flowers (with a long thin stalk, without thickening at the base) can also be collected – they are eaten in some culinary traditions (Kasynkina & Kudin, 2018). They do not produce fruits, so their removal does not harm the yield.

Brief summary: cut fruits with a sharp knife or pruning shears, leaving 2–3 cm of peduncle. Harvest in the morning or evening, avoiding rain and heat. Carefully place in containers, sort by size and condition. Do not leave cut fruits in the sun – take them quickly to the shade or a cool place.

5. Post‑harvest handling

Proper post‑harvest handling is a crucial step that determines how long the fruits will retain freshness, flavour, and marketable appearance. Zucchini, courgettes, and pattypan squashes are crops with delicate skin and high moisture content, so they are particularly sensitive to handling conditions. In this chapter, we will cover three key steps: cleaning, cooling, and preparation for storage.

Cleaning: to wash or not to wash?

One of the most common questions from gardeners: should fruits be washed immediately after harvest? The answer depends on how you plan to use them.

For fruits that will be eaten within 1–2 days:

  • Gentle rinsing with cool water to remove soil particles and dust is acceptable.
  • Be sure to let the fruits dry completely before putting them in the refrigerator or on the table – excess moisture on the skin accelerates mould development (Wehner et al., 2020; Welbaum, 2015).

For fruits intended for storage longer than 2–3 days:

  • Washing is not recommended. Water can damage the natural waxy bloom on the fruit surface, which has a protective function – it slows moisture evaporation and prevents pathogen penetration (Nonnecke, 1989).
  • If there are soil clods on the fruits, let them dry, then gently remove dirt with a dry soft brush or cloth. A dry clean rag can be used (Lebedeva, 1987).
  • In case of heavy soiling, a quick rinse is acceptable, but after that the fruits must be thoroughly dried in a well‑ventilated place at room temperature for 1–2 hours before storing (Tarakanov & Mukhin, 2003).

Why this works: on the surface of healthy fruits there is a microflora that under normal conditions does not cause rot. Washing disrupts this balance, and excess moisture creates a favourable environment for fungi and bacteria (Wehner et al., 2020).

Important: never soak fruits in water before storage. This drastically shortens their shelf life. Studies show that storing wet fruits halves the storage period compared to dry ones (Wehner et al., 2020; Kotov & Adritskaya, 2016).

Cooling: why and how

Zucchini, courgettes, and pattypan squashes are fruits with high water content (about 90–95%) and high respiration rates after harvest (Nonnecke, 1989). The faster you cool the fruits after harvest, the longer they will stay fresh.

Why cooling is so important:

  • Respiration rate and nutrient consumption are reduced, which slows tissue ageing (Welbaum, 2015).
  • Moisture loss is reduced, so fruits remain firm and juicy longer (Tarakanov & Mukhin, 2003).
  • Development of pathogenic microorganisms is inhibited, especially during storage (Wehner et al., 2020).

How to cool properly:

  • Ideal option: immediately after harvest, place fruits in a cool place with a temperature of +7…+10 °C. This is the optimal range for summer cucurbits (Nonnecke, 1989; Kotov & Adritskaya, 2016).
  • If no refrigerator is available: put the fruits in the shadiest and coolest place on your property or at home, for example, a cellar, garage, or basement. The main thing is to avoid direct sunlight (Lebedeva, 1987).
  • Do not overcool. At temperatures below +5 °C, zucchini and pattypan squashes begin to suffer chilling injury. This manifests as watery spots on the skin, softening of tissues, and loss of flavour (Wehner et al., 2020; Welbaum, 2015). Fruits with thin skin, especially courgettes and pattypan squashes, are particularly sensitive to cold (Nonnecke, 1989).
  • Avoid sharp temperature fluctuations. If fruits have been kept in the cold for a long time and then quickly moved to warmth, they may “sweat” and start to rot (Tarakanov & Mukhin, 2003).

Cooling speed: the faster field heat is removed, the better. Ideally, cooling should occur within 2–4 hours after harvest (Wehner et al., 2020). At home, this means: do not leave harvested fruits in a warm kitchen or in the sun – place them in the refrigerator or a cool room as soon as possible.

Preparation for storage: sorting and culling

Before placing fruits into long‑term storage, conduct a thorough inspection and sorting.

What to do:

1. Remove all fruits with damage. Even small scratches, punctures, or cracks are “entry gates” for infections. One rotting fruit can spoil the entire batch (Nonnecke, 1989; Wehner et al., 2020).

2. Sort by degree of maturity. Young, tender fruits at technical maturity (short “tail”, soft skin) have a limited storage life – no more than 7–10 days even under ideal conditions (Lebedeva, 1987). For long‑term storage, only fruits that have begun to form a hard rind (closer to biological maturity) are suitable, but their eating quality is already worse (Tarakanov & Mukhin, 2003).

3. Remove the peduncle? Leave a “tail” 2–3 cm long. If the peduncle was damaged or torn off, use that fruit first – it will store less well (Welbaum, 2015; Kotov & Adritskaya, 2016).

4. Treating the cut. In commercial vegetable growing, cut surfaces of the peduncle are sometimes treated with wax or fungicidal pastes to prevent infection (Wehner et al., 2020). At home, you can simply let the cut dry for an hour before storage – this reduces the risk of rot (Nonnecke, 1989).

Storage in polyethylene bags:

For young fruits that you plan to keep for a few days in the refrigerator, perforated polyethylene bags with ventilation holes can be used. The bag prevents moisture loss, and the holes provide gas exchange, preventing condensation and mould (Wehner et al., 2020; Tarakanov & Mukhin, 2003). However, do not seal the bag – this can lead to ethylene accumulation and accelerated ageing of the fruits (Nonnecke, 1989).

How to avoid damage when stacking:

  • Do not stack fruits more than 2–3 layers deep.
  • Lower fruits may crack under the weight of upper ones – use padding material (straw, paper, soft cloth) between layers (Welbaum, 2015).
  • For long‑term storage, wooden boxes or mesh containers that provide good ventilation are optimal (Lebedeva, 1987).

Brief summary: washing fruits before storage is not recommended. Cooling to +7…+10 °C should occur as soon as possible after harvest. Carefully sort the harvest, removing damaged specimens and separating fruits by degree of maturity and purpose.

6. Storage of the harvest

The ability of zucchini, courgettes, and pattypan squashes to keep after harvest directly depends on their degree of maturity. What is good for short‑term storage in the refrigerator is completely unsuitable for long‑term winter storage, and vice versa. In this chapter, we will cover all options: from storing young tender fruits to storing mature “winter” zucchini.

The main rule: keeping quality is determined by maturity

Keeping quality (the ability of a fruit to be stored without loss of quality) in cucurbits is directly related to the development of a protective layer – the rind (outer layer tissues) (Nonnecke, 1989; Wehner et al., 2020).

  • Young fruits at technical maturity have thin, delicate skin that easily loses moisture and is susceptible to microbial damage. Therefore, they have a limited storage life – no more than 7–14 days even under optimal conditions (Welbaum, 2015; Lebedeva, 1987).
  • Fruits that have reached biological maturity become covered with a dense, hard rind (sometimes called “shell”), which effectively protects internal tissues from drying out and pathogen penetration. Such fruits can last for several months (Tarakanov & Mukhin, 2003; Kotov & Adritskaya, 2016).

Important: in ordinary zucchini and courgettes, even when mature, the skin does not become as hard as in pumpkins. Therefore, their “winter” storage is always shorter than that of specialised winter pumpkins or varieties bred for keeping quality (‘Spaghetti’, ‘Kulinarny’) (Wehner et al., 2020; Nonnecke, 1989).

Storage of young fruits (technical maturity)

Young fruits are intended for quick use. Their main value is tenderness and juiciness, so the storage task is to preserve these qualities as long as possible.

Storage conditions:

  • Temperature: +7…+10 °C. This is critically important: at temperatures below +5 °C, fruits suffer chilling injury, which manifests as watery spots, tissue softening, and loss of flavour (Wehner et al., 2020; Nonnecke, 1989).
  • Relative humidity: 90–95%. High humidity prevents wilting. In the refrigerator, this is achieved by placing fruits in perforated polyethylene bags or containers (Tarakanov & Mukhin, 2003; Welbaum, 2015).
  • Gas composition: optimally 3–5% CO₂ and 3–5% O₂. Such composition slows respiration and yellowing of fruits (Nonnecke, 1989). In household conditions, this is difficult to achieve, but a perforated bag partially solves the problem.

Actual storage periods:

  • Zucchini and courgettes at technical maturity – 5–10 days at proper temperature and humidity (Lebedeva, 1987).
  • Pattypan squashes at technical maturity – 7–12 days (Nonnecke, 1989; Kotov & Adritskaya, 2016).
  • When stored at room temperature (+20…+25 °C), the period shrinks to 2–4 days (Welbaum, 2015).

Practical tips for household storage:

  • Wrap each fruit in a paper towel or napkin – this absorbs condensation and prevents rotting (Nonnecke, 1989).
  • Do not store young zucchini next to apples, pears, or tomatoes – they emit ethylene, which accelerates ageing and yellowing of the fruits (Wehner et al., 2020; Welbaum, 2015).
  • Before placing in the refrigerator, let the fruits dry if they were wet.

Storage of mature fruits (biological maturity)

If you decide to leave some fruits until full maturity – for example, for seed production or long‑term storage – you need to create the right conditions.

Signs of readiness for winter storage:

  • The skin has become dense, hard, and cannot be pierced with a fingernail (Nonnecke, 1989).
  • The fruit surface has acquired a dull shade (gloss has disappeared).
  • The peduncle has begun to dry out and become hard.
  • The seeds inside the fruit are hard and coloured in the variety‑specific colour (Lebedeva, 1987; Tarakanov & Mukhin, 2003).

Pre‑treatment (drying):

Before placing into long‑term storage, mature fruits must be dried for 7–10 days in a warm, well‑ventilated room (temperature +25…+30 °C, humidity about 80%). This process is called curing. It promotes healing of minor injuries, formation of protective cork tissue at cut sites, and hardening of the rind (Wehner et al., 2020; Welbaum, 2015). Without this procedure, storage life is reduced by 2–3 times (Nonnecke, 1989).

Winter storage conditions:

  • Temperature: +10…+15 °C (for most varieties). Optimal is +10…+12.8 °C (Nonnecke, 1989; Tarakanov & Mukhin, 2003). Below +10 °C, chilling injury begins; above +15 °C, fruits may sprout or rot.
  • Relative humidity: 50–70%. This is lower than for young fruits, which prevents rot development. However, below 50% humidity, fruits may shrivel and lose juiciness (Kotov & Adritskaya, 2016).
  • Ventilation: mandatory. Fruits should not be kept in airtight containers. Use slatted boxes or mesh containers (Wehner et al., 2020; Lebedeva, 1987).
  • Do not store together with apples, pears, melons – the ethylene emitted by these fruits stimulates ageing and accelerates spoilage (Nonnecke, 1989; Welbaum, 2015).

Storage periods for mature fruits:

  • Zucchini of varieties suitable for storage (‘Spaghetti’, certain hard‑rinded varieties) – 2–5 months (Wehner et al., 2020).
  • Courgettes when mature – 1–3 months, but eating quality significantly deteriorates (Nonnecke, 1989).
  • Mature pattypan squashes – 1–2 months (Tarakanov & Mukhin, 2003).

Important: many white‑fruited zucchini varieties (‘Gribovskiye 37’) are not intended for long‑term storage at all. Even mature fruits keep for no more than 1–2 months (Lebedeva, 1987). For winter storage, it is better to choose special varieties with a dense rind, for example, late‑ripening hard‑skinned pumpkins or spaghetti‑type varieties (Nonnecke, 1989).

Why young and mature fruits require different conditions

The reason for the differences lies in tissue structure:

  • Young fruit – living, actively respiring tissue with a thin covering. It needs high humidity to avoid wilting and temperatures not below +7 °C to avoid chilling stress. It cannot maintain its quality for long (Wehner et al., 2020).
  • Mature fruit – essentially a “preserved” structure with a thick, low‑permeability rind, low respiratory activity, and hardy seeds. It can be stored in drier and warmer conditions without fear of rapid moisture loss (Nonnecke, 1989).

Special features of storing pattypan squashes

Pattypan squashes at maturity have a very thick and hard rind, making them more storable than many zucchini (Lebedeva, 1987). With proper curing and temperature +10…+12 °C, mature pattypan squashes can be stored for up to 2–3 months (Tarakanov & Mukhin, 2003). However, their flesh becomes coarse, so for eating they are better used processed (e.g., in soups, stews) (Wehner et al., 2020).

7. Using the harvest

Zucchini, courgettes, and pattypan squashes are among the most versatile vegetables in the kitchen. They can be eaten at any stage of maturity, but the ways of use differ significantly depending on when and in what condition the fruits were harvested. In this chapter, we will look at the main directions for processing the harvest.

Fresh consumption

Young fruits at technical maturity are ideal for fresh dishes. Their thin skin and tender juicy flesh do not require long cooking (Nonnecke, 1989; Welbaum, 2015).

What can be prepared:

  • Salads. Zucchini and courgettes are grated or sliced thinly, added to other vegetables, dressed with oil, lemon juice, and herbs (Lebedeva, 1987).
  • Vegetable platters. Sliced into rounds or sticks, served with sour cream or yoghurt‑based sauces.
  • Juices and smoothies. Young courgettes, especially with thin skin, can be added to vegetable freshes to increase volume and nutritional value.

Important: for salads and fresh dishes, courgettes are best – they have thinner and more delicate skin than white‑fruited zucchini and almost no seeds at technical maturity (Nonnecke, 1989; Tarakanov & Mukhin, 2003). Pattypan squashes are used raw less often because of their dense structure, but small fruits (up to 5–6 cm in diameter) are good in sliced vegetable assortments (Kotov & Adritskaya, 2016).

Heat treatment: frying, stewing, baking

Young fruits harvested on time (zucchini 15–20 cm, pattypan 8–12 cm) respond well to all types of heat treatment.

  • Frying. Sliced into rounds or sticks, fried in oil until golden brown. Courgettes are particularly good – they release almost no water and retain firmness (Lebedeva, 1987).
  • Stewing. Fruits are added to stews, vegetable sautés, side dishes for meat. With prolonged stewing, the flesh softens, releasing juice that thickens and becomes the base of the sauce (Wehner et al., 2020).
  • Baking. Large pieces or stuffed halves are baked in the oven with cheese, herbs, minced meat, or vegetable filling (Nonnecke, 1989). Pattypan squashes, thanks to their shape, are convenient for stuffing – the “lid” is cut off, the seed part is removed, filled with stuffing, and baked (Tarakanov & Mukhin, 2003).
  • Grilling. Thin slices or whole small fruits are grilled until characteristic stripes appear – a light, aromatic dish with a smoky flavour (Welbaum, 2015).

Preserving

One of the best ways to preserve the harvest for winter is preserving. Young fruits, especially small ones (up to 8–10 cm for zucchini and 5–6 cm for pattypan), are used for pickling and assorted vegetables.

What can be preserved:

  • Pickled zucchini and pattypan squashes. Whole or sliced pieces are poured with hot brine (water, vinegar, salt, sugar, spices). This is a traditional method of processing the harvest in home gardens (Lebedeva, 1987; Balashev & Zeman, 1981).
  • Zucchini caviar. Over‑grown fruits, as well as any non‑standard ones, are used for making stewed caviar with tomatoes, onions, carrots, herbs, and spices. This dish is pasteurised and sealed in jars (Nonnecke, 1989; Kotov & Adritskaya, 2016).
  • Summer vegetable assorted. Zucchini, pattypan, peppers, tomatoes, and onions are sliced and pickled in a mixture with vegetable oil and vinegar – a ready‑to‑eat appetiser (Tarakanov & Mukhin, 2003).
  • Salting. Pattypan squashes are traditionally salted whole, like cucumbers – their dense flesh absorbs brine well and retains crunch (Lebedeva, 1987).

Important: only fruits at technical maturity with tender, undamaged skin are suitable for preserving. Mature fruits with coarse flesh are not used for pickling – they turn out tough and fibrous (Wehner et al., 2020).

Freezing

Freezing is a quick and convenient way to preserve the nutritional quality of young fruits for a long period (up to 8–12 months).

How to freeze correctly:

  • Slicing. Wash, dry, slice into rounds, cubes, or slices (Lebedeva, 1987).
  • Blanching. Dip in boiling water for 1–2 minutes, then cool rapidly in ice water. This inactivates enzymes that destroy vitamins and cause flesh darkening (Wehner et al., 2020; Welbaum, 2015).
  • Drying and packaging. After blanching, dry the fruits on a clean towel, pack in portioned bags (preferably vacuum) and place in the freezer at –18 °C or lower (Nonnecke, 1989).

Frozen zucchini and pattypan squashes are suitable for boiling, stewing, and baking all winter. However, upon thawing, the flesh loses some firmness, so they are not used for fresh salads (Kotov & Adritskaya, 2016).

Alternative: courgettes can be frozen without blanching, by slicing and quickly packing in vacuum bags. However, storage time then decreases to 3–4 months (Tarakanov & Mukhin, 2003).

Drying and powders

In some culinary traditions, young zucchini and courgettes are dried in slices or strips at temperatures not exceeding +40…+50 °C. Dried slices are added to soups, sauces, or ground into powder, used as a natural thickener and flavouring (Nonnecke, 1989; Wehner et al., 2020). However, in amateur gardening, this method is less common due to labour intensity and long duration.

Using mature fruits

Fruits at biological maturity (with hard rind, ripe seeds) are no longer suitable for fresh salads, frying, or pickling. However, they can be used for:

  • Soups and purées. The flesh of mature fruits, cut into pieces, cooks down well and gives a thick base (Lebedeva, 1987).
  • Whole baking. Some varieties (‘Spaghetti’) after baking produce strands resembling spaghetti, which are served with sauce (Wehner et al., 2020).
  • Filling for pastries. The flesh of mature fruits is grated or mashed, used as filling for pies, dumplings, fritters (Nonnecke, 1989).
  • Animal feed. Large, tough fruits can be fed to domestic animals (rabbits, chickens, pigs) (Balashev & Zeman, 1981; Tarakanov & Mukhin, 2003).

Seeds

If you left a few mature fruits for seed purposes, after storage (2–3 months in a dry warm place), the seeds are extracted, washed, dried, and stored in paper bags at room temperature. Viability is maintained for up to 5–8 years (Nonnecke, 1989; Welbaum, 2015).

Even with proper agronomy, mistakes at the harvesting and storage stage can nullify all efforts. In this chapter, we will analyse the most common problems – from too‑infrequent harvesting to improper storage – and give simple solutions on how to avoid them.

❌ Mistake 1. Harvesting too infrequently

How it manifests. Fruits are left on the plants until they become large, thinking that the yield will be bigger. As a result, over‑ripe, tough specimens hang on the bushes, new ovaries become few or do not form at all (Nonnecke, 1989; Welbaum, 2015).

Why it is bad. A ripening fruit becomes a powerful “consumer” of assimilates and suppresses the formation of new female flowers and ovaries. The plant redirects resources to seed maturation, not to continued fruiting (Wehner et al., 2020; Tarakanov & Mukhin, 2003).

How to do it right. Harvest fruits every 2–3 days, and at peak season – daily. Do not allow over‑ripeness: pick zucchini and courgettes at 12–20 cm length, pattypan at 5–12 cm diameter. Regular harvesting stimulates the formation of new ovaries (Lebedeva, 1987).

❌ Mistake 2. Harvesting too infrequently while expecting a “winter” crop

How it manifests. The gardener leaves zucchini and courgettes to ripen on the bush to full biological maturity, hoping they will store like pumpkins, while continuing to harvest ordinary young fruits from the same plants (Welbaum, 2015).

Why it is bad. Ordinary varieties of zucchini and courgettes, even when mature, do not have as dense a rind as specialised winter pumpkins. Their keeping quality is low (1–2 months), and the flavour and texture of the flesh deteriorate greatly (Nonnecke, 1989). Moreover, one ripening fruit left on the bush reduces the yield of new ovaries (Wehner et al., 2020).

How to do it right. For long‑term winter storage, use only special varieties with hard rind (‘Spaghetti’, hard‑skinned pumpkins). If you are growing ordinary zucchini and courgettes for eating, harvest them at technical maturity and process them. For seed production, leave 1–2 fruits on a separate plant that you will not use for mass harvesting (Tarakanov & Mukhin, 2003; Kotov & Adritskaya, 2016).

❌ Mistake 3. Tearing off fruits without a peduncle

How it manifests. The fruit is simply torn from the stem with a sharp movement, leaving a ragged cut or no “tail” at all (Nonnecke, 1989).

Why it is bad. An open wound on the fruit is an “entry gate” for rot pathogens, through it moisture actively evaporates, the fruit quickly loses firmness and begins to spoil (Wehner et al., 2020; Welbaum, 2015). The damaged stem of the plant also becomes vulnerable to infections (Lebedeva, 1987).

How to do it right. Use a sharp knife or pruning shears. Holding the fruit with one hand, make a clean cut, leaving a “tail” 2–3 cm long. Do not pull the fruit toward you when cutting (Tarakanov & Mukhin, 2003).

❌ Mistake 4. Damaging fruits during harvest and transport

How it manifests. Fruits are thrown into buckets or boxes, stacked several layers without padding, hitting each other (Nonnecke, 1989).

Why it is bad. Young fruits have thin delicate skin that is easily scratched and cracked. Even micro‑cracks invisible to the eye become sites for rot development. Fruits that have been bruised lose marketable appearance and shorten storage life (Wehner et al., 2020; Welbaum, 2015).

How to do it right. Place fruits in containers carefully, no more than 2–3 layers deep. Use soft padding (straw, hay, paper) between layers. Do not throw or drop fruits when loading (Lebedeva, 1987; Kotov & Adritskaya, 2016).

❌ Mistake 5. Storing young fruits at too low a temperature

How it manifests. Fruits are placed in a regular refrigerator at +4…+5 °C or even in a cold cellar, hoping they will last longer (Nonnecke, 1989).

Why it is bad. At temperatures below +7 °C, zucchini, courgettes, and pattypan squashes suffer chilling injury: watery spots appear on the skin, flesh becomes soft, loses flavour, and when returned to warmth, the fruits quickly rot (Wehner et al., 2020; Welbaum, 2015).

How to do it right. Store young fruits at +7…+10 °C and 90–95% humidity. This can be achieved in the refrigerator by placing them in perforated bags, but not in the coldest zone. For short‑term storage (2–4 days), room temperature in the shade is acceptable (Tarakanov & Mukhin, 2003; Lebedeva, 1987).

❌ Mistake 6. Storing mature fruits in polyethylene bags

How it manifests. Mature fruits intended for long‑term winter storage are packed in airtight polyethylene bags (Nonnecke, 1989).

Why it is bad. In an airtight environment, ethylene and condensate accumulate, provoking mould and rot even if the rind appears hard (Wehner et al., 2020; Welbaum, 2015).

How to do it right. Mature fruits should be stored with good ventilation – in slatted boxes, mesh containers, or on shelves. Do not cover them tightly. Optimum humidity for winter storage is 50–70% (Tarakanov & Mukhin, 2003).

❌ Mistake 7. Storing together with ethylene‑producing fruits

How it manifests. Storing zucchini and pattypan squashes in the same room as apples, pears, melons, or tomatoes (Nonnecke, 1989).

Why it is bad. These fruits emit ethylene gas, which accelerates ageing and yellowing of zucchini, causes tissue softening, and accelerates spoilage (Wehner et al., 2020; Welbaum, 2015). Ethylene is especially harmful to young fruits.

How to do it right. Store zucchini, courgettes, and pattypan squashes separately from ethylene‑producing crops. When storing, check whether there are any fruits with signs of rot in the storage – they also emit ethylene and infection (Nonnecke, 1989; Tarakanov & Mukhin, 2003).

❌ Mistake 8. Washing fruits before storage

How it manifests. Fruits are washed immediately before storing to make them look clean (Lebedeva, 1987).

Why it is bad. Water destroys the natural protective waxy bloom, and moisture left on the skin promotes fungal development. Storing wet fruits halves the keeping quality (Wehner et al., 2020; Welbaum, 2015).

How to do it right. Do not wash fruits intended for storage. Remove dry dirt with a soft brush after the fruits have dried. Washing is acceptable only for fruits that you plan to eat within 1–2 days (Nonnecke, 1989).

❌ Mistake 9. Ignoring sorting before storage

How it manifests. All collected fruits are stacked together, without checking for damage or different degrees of maturity (Welbaum, 2015).

Why it is bad. One damaged or starting‑to‑spoil fruit can infect the others during storage. Different degrees of maturity require different conditions (Tarakanov & Mukhin, 2003).

How to do it right. Before storing, carefully inspect each fruit. Remove all with cracks, scratches, dark spots. Separate fruits by size and degree of maturity (young separately, mature separately) so that you use them at the right time (Nonnecke, 1989; Lebedeva, 1987).

✅ Final checklist: how to avoid mistakes

1. Harvest regularly – every 2–3 days, do not wait for over‑ripeness.

2. Cut, do not tear – leave a “tail” of 2–3 cm.

3. Use sharp tools – avoid ragged cuts.

4. Handle gently – do not throw, crush, or stack carelessly.

5. Sort – separate damaged, different sizes, and different maturity stages.

6. Do not wash before storage – dry cleaning is acceptable.

7. Store at the right temperature – young +7…+10 °C, mature +10…+12 °C.

8. Ensure ventilation – do not use airtight packaging.

9. Avoid proximity to ethylene‑producing crops – apples, pears, melons, tomatoes – store separately.

10. Process in time – what is not eaten fresh, preserve or freeze.
