The main rule for early cabbage: do not delay harvesting. As soon as the head has filled out and become firm – cut it. Early varieties tend to crack faster than late ones, and if you miss the moment, you risk getting split heads instead of beautiful, dense ones, which won't store well even in the refrigerator (Startsev, 2021).

Early cabbage can be harvested even if the head hasn't reached maximum size – in this group, tenderness and juiciness are valued, not record weight. The main guide is density.

Mid-Season Cabbage: The Golden Mean

Mid-season varieties (100–115 days) are cabbage for fresh consumption in autumn and for short-term storage. Harvesting begins in August. Here, you can afford to wait a bit – allowing the heads to gain weight and density – but again, avoid letting them over-mature (Swiader and Ware, 1992).

Mid-season cabbage is often used for sauerkraut – it is harvested at full technical maturity when the head is firm but hasn't yet started to become "woody." The flavor at this stage is most vibrant, and the sugar content is at its maximum.

Late-maturing varieties (over 115 days, often up to 150 days) are cabbage for winter storage. They are harvested last, when the heads have reached maximum density and weight (Startsev, 2021). In northern regions, this is late September – October; in southern regions, November.

Typically, the average daily air temperature of +3…+5 °C (37–41 °F) is used as a guide. These heads are best fermented, frozen, used in salads and hot dishes first – within 1–2 months.

Third group – culls.

  • heads with clear signs of disease (rot, spots, mold);
  • severely cracked;
  • frozen (if there were severe frosts);
  • damaged by rodents or insects.

Such heads are not stored and are not used for food. They should be immediately removed from the area (Startsev, 2021).

Drying: How to Properly Dry the Heads

Immediately after harvest, the cabbage needs to be dried. This is one of the most important preparation steps.

How to do it? Heads are laid out in a single layer in a dry, well-ventilated room (or under a canopy if the weather is dry) for 2–3 days. It's important that the heads do not touch each other – air must circulate freely around each one (Startsev, 2021).

Why is this needed? During drying, moisture evaporates from the surface of the wrapper leaves and the cut site. This:

  • reduces the risk of mold and rot developing in the storage;
  • allows the stalk to "heal" – dense, dry tissue forms at the cut site, serving as a natural barrier against infections (Swiader and Ware, 1992);
  • helps place the heads in a state of "dormancy," slowing down metabolic processes (Kotov and Adritskaya, 2016).

Ideal drying conditions:

  • temperature +12…+18 °C (54–64 °F) – but not above +20 °C (68 °F);
  • relative humidity 50–70%;
  • good ventilation (draft or a running fan).

If the weather is damp and you cannot dry outdoors, use any dry space: a shed, veranda, or garage. The main thing is that it's dry and there is a possibility for ventilation (Utah State University Extension, 2020).

Important: do not leave the heads in direct sunlight. Direct sun overheats the cabbage and can cause wilting of the wrapper leaves. Choose a shaded spot or a canopy (Swiader and Ware, 1992).

Cleaning: Removing Dirt and Damaged Leaves

After drying, the heads can be cleaned:

  • Remove dirt and soil – with a soft brush or dry cloth. Do not wash the heads! Water is extra moisture that accelerates rot development (Utah State University Extension, 2020).
  • Remove outer leaves if they are heavily soiled or damaged. But leave at least 2–3 healthy wrapper leaves – they protect the head during storage (Startsev, 2021).
  • Do not tear off dry leaf tips – this can breach the integrity of the protective layer and open the door to bacteria.
  • Trim roots (if the cabbage was dug up with roots) to a length of 1–2 cm (0.4–0.8 in). Long roots can start to rot in storage.

Sorting by Size and Quality

After drying and cleaning, conduct final sorting. This is the time to notice defects that weren't visible immediately after cutting (e.g., hidden cracks, initial wilting).

Size matters: Heads of different sizes should be stored separately. Large heads generally store longer but require more space. Small heads tend to wilt faster (Swiader and Ware, 1992).

Even the best, properly cut, and dried cabbage can be lost in a matter of weeks if suitable conditions aren't created. Storage is not just "put it in the cellar and forget it." Cabbage, like any living organism, continues to breathe, consume nutrient reserves, and lose moisture. The gardener's task is to slow these processes down as much as possible to keep the heads fresh for as long as possible. The three pillars of successful storage are temperature, humidity, and ventilation. Let's examine each in detail.

Temperature: The Gold Standard of 0…+1 °C (32–34 °F)

The optimal temperature for storing white cabbage is between 0 and +1 °C (32–34 °F) (Swiader and Ware, 1992; Startsev, 2021). At this temperature, the plant's respiration slows to a minimum, but cells are not damaged by cold (which happens during freezing).

Why exactly 0…+1 °C (32–34 °F)?

  • At temperatures above +4 °C (39 °F), cabbage starts to breathe actively, consuming sugars and losing moisture – heads become flaccid and lose taste.
  • When temperatures drop below 0 °C (especially below -1 °C / 30 °F), water in the tissues crystallizes, cells are destroyed – after thawing, the cabbage becomes glassy, watery, and quickly rots (Swiader and Ware, 1992).

Are fluctuations acceptable? Yes, small fluctuations within ±1 °C are acceptable, but sharp changes should be avoided. They cause condensation on the surface of the heads, promoting mold and bacterial rot (Kotov and Adritskaya, 2016).

Storage duration at different temperatures:

  • at 0…+1 °C (32–34 °F) – 5–6 months or more (for late varieties);
  • at +2…+4 °C (36–39 °F) – 3–4 months;
  • at +6…+8 °C (43–46 °F) – 1–2 months (Kemble et al., 2022).

Late varieties (e.g., 'Amager 611', 'Zimovka 1474') store longer; early varieties significantly less (Startsev, 2021).

Air Humidity: Almost Like Fog

Cabbage is a crop that requires very high relative humidity – 95–100% (Swiader and Ware, 1992; Kemble et al., 2022). This is air nearly saturated with vapor, close to the dew point.

Why such high humidity? Cabbage loses moisture through its wrapper leaves and the cut site. If the air is dry, heads quickly wilt, become limp, losing firmness and taste. At 95–100% humidity, evaporation is minimal, and the cabbage remains juicy and crisp (Utah State University Extension, 2020).

How to achieve this humidity in a cellar?

  • Place containers with water or wet burlap.
  • Use automatic humidifiers (if possible).
  • Regularly sprinkle water on the floor and walls (but not on the cabbage!).
  • Avoid drafts that dry the air (Swiader and Ware, 1992).

Caution: Excess humidity (above 100%) leads to condensation forming on the heads, which promotes mold and rot. The ideal is 95–98%, without water droplets on the surface.

Ventilation: Fresh Air without Drafts

Cabbage, like all living plants, breathes. During respiration, it absorbs oxygen and releases carbon dioxide, water, and heat. If ventilation is poor in the storage, carbon dioxide accumulates, which can lead to cabbage "suffocation," darkening of tissues, and unpleasant odors (Startsev, 2021).

How should ventilation work?

  • Air should circulate slowly, but without drafts that dry the heads.
  • Ideally, the storage should have natural or forced ventilation with adjustable airflow.
  • When storing heads (especially in containers or on shelves), it's important to leave gaps – 5–10 cm (2–4 inches) – for free air movement (Swiader and Ware, 1992).

Why is this important? Ventilation removes excess moisture and carbon dioxide, prevents condensation and mold growth, and equalizes the temperature throughout the storage space (Kotov and Adritskaya, 2016).

Practical advice: If the storage is small (cellar, basement), opening a vent for 10–15 minutes once a day during the warmest part of the day is usually sufficient. The main thing is to avoid sharp drops or rises in temperature.

The Interplay of Parameters: How They Work Together

Temperature, humidity, and ventilation are closely linked:

  • At low temperatures (0…+1 °C / 32–34 °F), air humidity naturally increases because cold air holds less water vapor. This is good – it reduces evaporation from the heads.
  • When temperature rises, humidity needs to be artificially maintained, otherwise, the air becomes drier.
  • Ventilation removes excess moisture and carbon dioxide but can lower humidity, so it needs to be regulated (e.g., run it only for short periods or use air ducts directed at open space, not directly at the heads) (Swiader and Ware, 1992).

Storage in a Refrigerator: Smaller Volumes, Same Principles

If you don't have a cellar, cabbage can be stored in a refrigerator at +1…+3 °C (34–37 °F), but the storage time will be shorter (2–4 months, instead of 5–6). Humidity in a refrigerator is usually lower than required, so heads need to be packaged:

  • In perforated plastic bags (with holes for breathing).
  • Or wrapped in damp paper (newspaper, parchment) and placed in a plastic bag, but not sealed airtight.
  • You can also use special vegetable containers with adjustable humidity (South Dakota State University Extension, 2024).

Important: Do not store cabbage near apples, pears, or other fruits that emit ethylene. Ethylene accelerates tissue aging, causes leaf yellowing, and reduces storage ability (Swiader and Ware, 1992).

How to Check Storage Conditions

  • Temperature: Use a thermometer placed at the level of the heads (not on the floor or ceiling). Two thermometers in different parts of the storage are better.
  • Humidity: Inexpensive hygrometers (humidity meters) are available. They help you understand if the air is too dry.
  • Ventilation: Check for stagnant air – often felt by smell (dampness, mold) or condensation on the walls.

If you notice condensation on the walls and water droplets on the heads, humidity is too high, and ventilation needs to be increased. If the heads start to wilt – humidity is low; it's time to place containers with water (Kotov and Adritskaya, 2016).

What to Do if Conditions Aren't Ideal?

If the cellar isn't cold enough or too dry, you can use some tricks:

  • Use snow or ice – in winter, bring snow into the storage to lower the temperature.
  • Insulate the storage – to prevent freezing in winter and overheating in autumn.
  • Employ "active storage" – periodically move the cabbage to a cold place (veranda, unheated outbuilding) during the coldest months if the cellar is too warm (Swiader and Ware, 1992).

But it's always best to plan for a suitable location in advance.

Methods for Storing Cabbage: From Cellar to Trench

Growing a good harvest is only half the battle. It's much harder to preserve it until spring, especially if you don't have an ideal cellar. Fortunately, cabbage is a flexible crop and can be stored in various ways, depending on your capabilities and climate. The main thing is to understand the principles outlined in the previous chapter: cold (around 0 °C / 32 °F), high humidity (95–100%), and moderate ventilation. Any storage method is just a way to create these conditions using available means.

Storage in a Cellar or Basement

This is the classic and most reliable method if you have a suitable space. The cellar should be dry, free of mold on the walls, with temperatures no higher than +5 °C (41 °F) in autumn and no lower than 0 °C (32 °F) in winter. Ideally, with forced ventilation or at least vents (Swiader and Ware, 1992).

On Shelves and Racks

The simplest and most convenient method – place heads on wooden shelves or racks in a single layer, with the stalk facing up. Why? This allows air to circulate freely around each head, reducing the risk of condensation and mold. Also, in this position, the stalk isn't damaged, and the wrapper leaves remain intact (Startsev, 2021).

  • Heads should not touch – leave gaps of 5–10 cm (2–4 inches).
  • Shelves must be clean and dry, ideally treated with an antiseptic (e.g., copper sulfate solution) a few weeks before storing the crop.
  • Do not place cabbage directly on a concrete or earthen floor – it's colder there, and condensation can accumulate.

In Crates or Containers

If shelves are insufficient, use wooden or plastic crates. Important rules:

  • Stack heads no more than 2–3 layers deep. Top layers press on the bottom ones, which can cause damage and accelerate spoilage.
  • Place dry paper or sawdust between layers to absorb excess moisture (Swiader and Ware, 1992).
  • Crates should have ventilation holes (or be slatted).
  • Do not place crates flush against walls – leave space for air circulation.

Hanging by the Stalk

This old-fashioned method is particularly good for small volumes and varieties with long stalks (e.g., some late varieties). Cabbage is dug up with roots, lower roots are trimmed, and they are hung by the stalk from crossbeams or hooks in the cellar (Startsev, 2021).

Pros: Heads don't touch each other, air washes them from all sides – almost ideal ventilation. The downside is that it requires high ceilings and sturdy fastenings. This method also makes it easy to inspect each head and spot signs of spoilage early.

In Polyethylene Bags (with Perforation)

Recently, gardeners are increasingly using thick polyethylene bags (trash bags, food-grade bags) for storing cabbage in cellars. The method: Heads are placed in a bag, tied, but with several small holes made for gas exchange (e.g., poked with an awl in several places). The bag creates high humidity inside, almost like a storage chamber, and prevents wilting (Swiader and Ware, 1992; Kemble et al., 2022).

Important:

  • Do not seal the bag airtight – cabbage breathes, and CO2 must escape.
  • Periodically (every 1–2 weeks), check the condition of the heads and air out the bag if a musty smell appears.
  • This method is more suitable for short-term (2–3 month) storage, as internal humidity can become excessive.

Storage in a Refrigerator

If you don't have a cellar, or your harvest is small, a regular household refrigerator is an excellent option. Cabbage is stored there at +1…+3 °C (34–37 °F) in the vegetable drawer. However, humidity in the refrigerator is usually lower than optimal (around 80–85%), so heads need to be packaged:

  • Wrap each head in damp paper (newspaper, parchment) and place it in a plastic bag with holes.
  • Or use special containers with adjustable humidity.
  • Do not wash cabbage before storing – excess moisture accelerates rotting (Utah State University Extension, 2020; South Dakota State University Extension, 2024).

Storage time in the refrigerator is up to 2–4 months for late varieties. Early varieties store for considerably less time (Iowa State University Extension, 2024).

Important: Do not store cabbage near apples, pears, or other ethylene-producing fruits – this accelerates aging and spoilage (Swiader and Ware, 1992).

Storage in Trenches and Clamps

This method dates back to times when cellars weren't common and is especially relevant for regions with cold winters (e.g., northern US, Canada, Siberia). Cabbage is placed directly in the ground, creating a natural storage protected from freezing by a layer of earth and snow (Startsev, 2021).

Constructing a trench (clamp):

  • Dig a trench 40–50 cm (16–20 inches) deep, 1–1.5 m (3–5 ft) wide, and variable length (up to 5–10 m / 16–33 ft).
  • Lay a layer of dry straw or boards at the bottom to prevent heads from touching damp soil.
  • Place heads in 1–2 layers, tightly against each other.
  • Cover with a layer of dry straw 20–30 cm (8–12 inches) thick, then a layer of earth 30–40 cm (12–16 inches) thick (or manure to generate heat).
  • When severe frosts arrive, additionally insulate with snow (layer 50–60 cm / 20–24 inches).

Important: The trench should be on elevated ground to avoid being flooded by spring waters. Also, provide ventilation pipes (vertical) at the beginning and end of the trench to vent CO2. Keep ventilation open until frost, then partially close it to prevent chilling (Startsev, 2021).

Pros: Requires no special building, is cheap, and allows cabbage to be preserved until spring in harsh winter regions. Cons: Difficult to monitor condition; risk of freezing or rotting during thaws. This method is better suited for farmers, but gardeners can also use it for part of their harvest.

Storage in Sand or Sawdust

An alternative to a cellar is crates or barrels with moist sand or sawdust. Cabbage is placed in the sand so that it's completely covered, but the stalk and wrapper leaves remain on the surface. The sand maintains high humidity and stable temperature around the heads (Startsev, 2021).

This method requires a lot of sand and is only suitable for small volumes but works well in dry basements where natural humidity is low.

Storage in Snow

In regions with stable snow cover, you can simply leave some cabbage in the field, covering it with snow. Heads are stacked in small clamps (up to 1 m / 3 ft high), covered with a layer of straw or dry leaves, and then with snow (preferably packed down). In such storage, the internal temperature stays around 0 °C (32 °F) (Startsev, 2021).

Tip: Use this method for cabbage intended for sauerkraut or quick consumption, rather than long-term storage until spring, as thaws can trigger rotting.

4. Do not store cabbage immediately after rain. It must be completely dry (Utah State University Extension, 2020).

Typical Problems During Cabbage Storage: How to Recognize, Prevent, and Save the Harvest

Even with ideally organized storage, problems can sometimes arise. Cabbage is a living organism; its tissues continue to respire, evaporate moisture, and react to environmental changes. Additionally, fungal spores or bacteria may have landed on the heads back in the field. The key is to notice the problem in time and take action to prevent it from spreading to the entire harvest.

Gray Mold (Botrytis cinerea)

What it looks like: Fluffy gray or smoky mold spots appear on the wrapper leaves, often with small black dots (sclerotia). Affected tissues become slimy and turn brown. Over time, the rot penetrates inside the head. Particularly common during high humidity and stagnant air (Startsev, 2021; Kotov and Adritskaya, 2016).

Why it appears: The fungus enters through micro-cracks, mechanical damage, or cut sites. Development is favored by:

  • excessively high humidity (condensation on heads);
  • poor ventilation;
  • storing cabbage damaged by frost or showing signs of disease from the field (Swiader and Ware, 1992).

What to do if you notice it:

  • Immediately remove the affected head (and neighboring ones if they have suspicious spots).
  • Lower the humidity in storage – increase ventilation, dry the space.
  • Remove condensation – wipe walls, ensure heads aren't touching each other.

Prevention:

  • thorough sorting before storage;
  • storing only absolutely dry and healthy heads;
  • ensuring good ventilation;
  • regular inspections (every 2–3 weeks) (Swiader and Ware, 1992).

White Mold (Sclerotinia sclerotiorum)

What it looks like: A cottony white growth of mycelium appears on the heads, spreading rapidly. Affected tissues become watery, soften, and develop an unpleasant odor. Eventually, hard black sclerotia (resembling mustard seeds) form on the growth. White mold is particularly aggressive and can destroy a significant part of the harvest within weeks (Startsev, 2021).

Why it appears: The fungus persists in soil and on plant debris. Highest risk occurs if cabbage was overwatered before harvest or sustained mechanical damage. Infection often occurs through the stalk if the cut was made too close to the head (Swiader and Ware, 1992).

What to do: Immediately remove affected heads from storage, avoiding contact with healthy ones. Ventilate the storage, reduce humidity.

Prevention:

  • crop rotation (source is soil);
  • leaving a sufficiently long stalk when cutting;
  • mandatory drying of heads before storage;
  • do not store cabbage grown in areas where white mold occurred in previous years (Swiader and Ware, 1992).

Slime Rot (Bacterial Soft Rot)

What it looks like: The head softens, becomes watery, and emits a sharp, unpleasant putrid odor. Tissues literally "dissolve," turning into a mushy mass. Often starts at the cut site and spreads rapidly inward (Kotov and Adritskaya, 2016).

Why it appears: Bacteria (Erwinia, Pseudomonas) enter through damage to wrapper leaves, through insects, or via the stalk. High humidity and temperatures above +4 °C (39 °F) contribute (Startsev, 2021).

What to do: Remove affected head immediately – ideally, not just throw it out but take it out of the storage area to prevent bacterial spread. Ventilate storage, ensure temperature isn't elevated.

Prevention:

  • use only healthy, undamaged planting material;
  • handle heads gently during harvest and sorting;
  • protect against pests (e.g., cabbage root fly, which damages roots and creates entry points for bacteria) (Swiader and Ware, 1992).

Wilting (Loss of Turgor)

What it looks like: Wrapper leaves lose firmness, become wrinkled; the head feels soft and hollow to the touch. When cut, tissues appear dry, lacking juiciness (Utah State University Extension, 2020).

Why it appears: The main cause is excessively low humidity in storage (below 85%). Cabbage loses moisture through evaporation, especially if wrapper leaves are damaged or removed. It can also be due to head aging (if left too long in the field) (Swiader and Ware, 1992).

What to do: Wilted cabbage can still be used for food but is not suitable for storage. To prevent wilting of other heads, increase humidity in storage: place containers of water, use wet burlap, or a humidifier.

Prevention:

  • storing at 95–100% humidity;
  • leaving enough wrapper leaves (2–3 "shirts") when cutting;
  • using perforated plastic bags to maintain humidity.

Sprouting

What it looks like: Small green sprouts emerge from the stalk or leaf axils (sometimes rapidly). When cut, internal tissues begin to grow at the expense of head density (Startsev, 2021).

Why it appears: The main reason is storage temperatures too high (above +4 °C / 39 °F). At elevated temperatures, cabbage "wakes up" and tries to continue growing, preparing for flowering (Swiader and Ware, 1992). Light exposure can also stimulate sprouting.

What to do: Sprouted heads won't store long. They need immediate processing: ferment, freeze, or use fresh. The growth process cannot be stopped, but can be slowed by lowering the temperature to 0 °C (32 °F).

Prevention:

  • strict adherence to temperature regime (0…+1 °C / 32–34 °F);
  • complete darkness in storage – light activates growth;
  • using late, storage-tolerant varieties.

Internal Tissue Darkening (Tipburn / Pepper Spot / Necrosis)

What it looks like: When the head is cut, small black or dark brown spots, dots, or streaks are visible. The outside of the head may look perfectly healthy. Affected areas taste bitter and unpleasant (Kotov and Adritskaya, 2016).

Why it appears: This is a physiological disorder related to impaired calcium and potassium metabolism. Often occurs due to:

  • uneven watering (drought followed by heavy rain);
  • excess nitrogen fertilizer (promoting growth at the expense of tissue quality);
  • calcium deficiency in soil;
  • sharp temperature fluctuations (Swiader and Ware, 1992).

What to do: If necrosis is detected, healthy parts of the head can be used for food by cutting out the affected areas. However, such heads are unsuitable for long-term storage – they need to be processed first.

Prevention:

  • balanced plant nutrition throughout the season;
  • regular watering (avoiding sharp moisture fluctuations);
  • using varieties resistant to necrosis (Swiader and Ware, 1992).

Darkening at the Cut Site (Oxidation)

What it looks like: The cut surface on the stalk darkens, turning brown or black. Sometimes the darkening spreads to inner leaves if the stalk was cut too short.

Why it appears: This is a natural oxidation reaction but may indicate initial signs of bacterial or fungal disease. If darkening spreads rapidly, it's a warning sign (Startsev, 2021).

What to do: A darkened cut is an entry point for infection. If only the tip of the stalk darkens, you can trim it back to healthy white tissue and use the head promptly. If darkening has already spread inside, the head should be discarded.

Prevention: Leave a stalk length of 2–3 cm (0.8–1.2 in), use sharp, clean tools, and ensure the cut is even and dry.

General Action Plan When Problems are Found

1. Stop and assess. If you find one problematic head, immediately inspect all neighboring heads.

2. Isolate. Remove the affected head from storage and take it far away.

3. Ventilate. Increase ventilation in the storage area.

4. Adjust conditions. Lower temperature if too high, or increase humidity if too low.

5. Keep records. Note when and what problems occurred – this will help in the next season.
