On mesh racks: Spread the garlic on racks with mesh bottoms (e.g., wire mesh) in a single layer, so air passes from both below and above.
Floor driers with active ventilation: This method is used in large operations. Garlic is loaded onto a slatted floor, and warm air is blown through it with fans. This ensures fast and even drying even for large volumes of crop (Autko et al., 2012).
4. Determining Readiness for Storage

- The neck of the bulb is completely dry, firm, and rustling.
- The wrapper scales have acquired the characteristic colour of the variety and tightly envelop the bulb.
2. Tools
You will need a sharp, clean tool for trimming.
- Secateurs or scissors. Ideal for small volumes. The tool should be sharp to make a clean cut, not “crush” the tissues.
- For large volumes (e.g., with machinery), specialised garlic trimming lines are used, such as the CRF‑13 “ERME” (Autko et al., 2012).

2. Two Storage Regimes: Culinary and Seed
Why does seed garlic require a higher temperature? It is all about physiology. For garlic to flower and produce normal bulbs the next year, it must undergo vernalisation – exposure to certain temperatures. Storage at 8‑10 °C stimulates flower stalk initiation, while storage at 0 °C suppresses it (Brewster, 2008).
Therefore:
- Culinary garlic: Store at 0 °C and 65‑75% humidity. At this temperature, it hardly sprouts and does not lose moisture.
- Seed garlic (for planting): Store at 8‑10 °C and 70‑80% humidity. This ensures friendly emergence and bolting (for winter varieties) in the next season.
3. Where and How to Organise Storage in Domestic Conditions?
Not everyone has professional vegetable stores. Here are some practical options for gardeners and small farmers.
Cellar or basement:
- Pros: Usually stable temperature close to optimal.
- Cons: Often high humidity.
- Solution: Ensure good ventilation (vents, exhaust). Store garlic in mesh bags or crates with gaps, hung or placed on shelves so that air circulates from all sides (Balashev and Zeman, 1981). Do not place crates directly on a concrete floor – use wooden pallets.
Apartment or house:
- Pros: Low humidity.
- Cons: Too warm.
- Solution: Find the coolest spot: a pantry, insulated loggia, hallway. Garlic in plaits or mesh bags can be hung on the wall or under the ceiling. In a cupboard or pantry, you can spread it out in boxes. The main thing is that it is dry and not too warm (Engeland, 1991).
Refrigerator:
- This is not the best option for long‑term storage, as humidity in the refrigerator is usually high (above 80%). But for small volumes it will do. The main thing is to keep garlic in paper bags or special containers with holes to avoid condensation.
Dry, ventilated room:
- Ideal if the temperature stays within 5‑15 °C. For example, a dry attic, unheated veranda, shed.
4. What to Avoid When Storing
- No plastic! In sealed bags, garlic “suffocates” (it needs oxygen), releases moisture, and begins to rot (Engeland, 1991).
- Do not store near potatoes or other vegetables that give off a lot of moisture. This raises the humidity around the garlic and stimulates sprouting (Brewster, 2008).
- Do not allow sharp temperature fluctuations. This causes condensation on the bulbs and provokes sprouting and disease.
- Do not put crates on the floor. Humidity is higher near the floor, and air circulation is poorer. Use pallets or shelves.
5. How to Know If Garlic Is Storing Correctly?
During the first two weeks after storage, check the condition of the garlic. If you notice:
- Mould: Humidity is too high. Improve ventilation, sort the bulbs, remove damaged ones.
- Drying and shrivelling: Humidity is too low. Lightly moisten the room (place a container of water) or transfer the garlic to mesh bags with slightly tighter weave.
- Sprouting: Too warm. Find a cooler place (Engeland, 1991).

Winter and spring garlic are not just different planting times. They have different physiology, different bulb structure, and consequently different storage requirements and different storage ability. Understanding these differences is the key to successful preservation of the crop.
1. Biological Basis of the Differences
The main difference lies in the duration of the dormant period.
- Winter garlic has a shorter natural dormancy period. It is “programmed” for rapid spring awakening, so in warm conditions (above 15‑20 °C) it may begin to sprout as early as 2‑3 months after harvest (Brewster, 2008).
- Spring garlic, on the other hand, has a deeper and longer dormancy period. It can store much longer, sometimes until the next harvest, without losing quality (Engeland, 1991).
2. Differences in Bulb Structure
- Winter garlic: Typically has fewer large cloves (4‑10), arranged in a single row around a central stem (in bolting varieties). Wrapper scales are often denser and thicker.
- Spring garlic: Usually has many more smaller cloves (10‑20 or more), arranged spirally in several layers. Wrapper scales are often thinner, but the bulb as a whole is more compact (Engeland, 1991).
3. Temperature Storage Regimes
Each type of garlic has its own optimal temperatures.
- For spring garlic the optimum is temperature from -1 to 0 °C and humidity 65‑75%. At this temperature, it stores longest, up to 7‑8 months, almost without losing moisture or sprouting (Brewster, 2008; Balashev and Zeman, 1981).
- For winter garlic the optimum is temperature from 0 to +2 °C at the same humidity (65‑75%). If winter garlic is stored at a higher temperature (e.g., room temperature), it may begin to sprout in winter (Brewster, 2008).
Important: Winter garlic is very sensitive to temperatures in the range 4‑10 °C. It is in this interval that sprouting processes are most actively triggered. Therefore, for winter garlic it is critical to avoid storage under such conditions (Engeland, 1991).
4. Differences in Storage Ability
- Spring garlic has better storage ability. Under proper conditions (0 °C, 65‑75% humidity) it can store for 6‑8 months, until the new harvest (Engeland, 1991).
- Winter garlic stores less well. Its maximum storage life under optimal conditions is 4‑6 months. Therefore, winter garlic is recommended for use first, leaving spring garlic for longer storage (Brewster, 2008; Engeland, 1991).
5. Specifics of Storing Seed Garlic
Storage requirements for seed (planting) garlic also differ.
- Seed spring garlic is stored the same as culinary garlic, at 0 °C. This prevents premature sprouting and preserves its germination.
- Seed winter garlic for spring planting is stored at 8‑10 °C (Autko et al., 2012; Engeland, 1991). This is an important agronomic practice. Storage at this temperature stimulates flower stalk initiation (bolting), which is normal for winter varieties and ensures their proper development in the next season.
6. Practical Recommendations
- Sort garlic by type. Store winter and spring garlic separately to avoid mixing them up.
- Use winter garlic first. It is less storable, so it is better to use it for food in autumn and early winter.
- Keep spring garlic for spring. Its high storage ability allows you to preserve it until summer, when fresh garlic is gone.
- Select the best bulbs for planting of each type and store them at the recommended temperatures.
- Pay attention to the variety. Within each group there are varieties with different storage ability. For example, some winter garlic varieties (from the “Rocambole” or “Continental” groups) may store longer than others (Engeland, 1991).
